Breaking any of these further open does exactly that.
Top left: G15 lcd.
Top right: Sony minidisc lcd.
Bot: Kodak camera display.
not pictured (not found actually) lcd from a printer.
Of these only the minidisc one seems to have the chips present, and even then, on a board with way more stuff.

The G15 lcd is not all that relevant seeing how I'll be reusing the original pcb. This cable is busted though xD

Okay, just to clarify I am by no means an expert on the matter.

Well, this is of course no proof just a hint but none of these seem to have enough wires going into them to address every pixel so there must be some kind of controller at the end of that wire.

Not so sure about that;
G15 for sure has no controller in there, and plenty of miniscule traces in that cable (34 off the top of my head )
That camera display also has quite a few traces (quick count approx 40), and the minidisc one, well yeah- the chip is under that black blob prob.

er, not for every pixel themselves ofc, prob some x/y system; which would prob indicate some controller or logic...
But how would you go about finding that shi out, without accidentally frying it ofcourse

Well, I don't really have good recipe. It's random mixture of googling, scrolling through datasheets, tracing connections and randomly trying ways that work on other displays. So far it worked more often than not but it doesn't always work. I just stop when I get bored, LCDs aren't that expensive.
