Just an idea what to do with existing key caps:

Sorry I don't get it. To me the only "81" caps in need of recycling are offcenter and stabilized n>1*n>=1 caps.

It is just an idea to place Cherry key caps from a regular 101/102 key keyboard in a different layout.

Some of the keys are made for different rows than you placed them on.
Anyway ... I would place Del next to Backspace. (and I have)
I would also rearrange the function keys into two groups in three columns, like this:

Not a good idea, unless the key caps are all in the same color.

Also, I know they are in wrong rows, but the 'normal' layout is boring.

Not much.

On the left, everything is in row 1, the rest is at most one row further down than usual, which should be OK.

Except for Del.
